Mango Strawberry Cheesecake

Ingredients
- Cheesecake
- 2 pkgs (8 oz/250 g each) soft Canadian Cream cheese
- 1 2/3 cup (410 mL) sour cream
- 1 cup (250 mL) sugar
- 1 cup (250 mL) pureed mango
- 1 cup (250 mL) crushed fresh strawberries or frozen strawberries
- 5 eggs beaten
- 2 tbsp (30 mL) all-purpose flour
- Graham-Cracker and Butter Cookie Crumb Crust
- 1 cup (250 mL) crushed Graham crackers
- 2/3 cup (160 mL) crushed butter cookies
- 2 tbsp (30 mL) brown sugar
- 1/3 cup (80 mL) melted butter

Preparation
Cheesecake:
In large bowl, mix together Canadian Cream cheese, sour cream and sugar. Add pureed mangoes, strawberries, eggs and flour. Mix well until smooth. Pour mixture into Graham-Cracker and Butter Cookie Crumb Crust.
Bake in oven for 60 minutes at 325 °F (160 °C) or until toothpick inserted in centre comes out clean.
Remove from oven and let stand for 1 hour before serving.
Graham-Cracker and Butter Cookie Crumb Crust:
Preheat oven to 350 °F (180 °C).
In bowl, mix together Graham-crackers, butter cookies and brown sugar. Blend in butter and mix well. Press mixture into bottom of 12-inch (30 cm) springform pan.
Bake for 10 minutes. Remove from oven and let stand.
