Ingredients
- 4 large firm tomatoes
- 2 cups (500 mL) cooked wild rice
- 4 oz (125 g) Canadian Blue Ermite cheese crumbled
- 1/3 cup (80 mL) toasted pine nuts
- Salt and pepper to taste
- Olive oil

Preparation
Slice off tomato tops. Hollow out tomato seeds and pulp, without piercing peel. Reserve pulp for other usage.
In bowl, combine wild rice, Canadian Blue Ermite cheese and pine nuts. Reserve some cheese for garnish. Season to taste with salt and pepper. Stuff tomato shells with rice and cheese mixture. Top with remaining Canadian Blue Ermite cheese.
Cook on oiled barbecue grill over medium-low heat for about 15 minutes, with the lid closed. Reduce heat if needed.
Serve 1 stuffed tomato per person.
