Smoked Salmon and Cantonnier Cheese Salad

Ingredients
- 8 cups (2 L) choice of lettuces (curly endive, arugula, lamb's lettuce, etc.) torn into pieces
- 8 oz (250 g) smoked salmon in thin strips
- 5 to 8 oz (150 g to 250 g) Canadian Cantonnier cheese diced
- Drained capers
- Olive oil
- Salt and freshly ground pepper to taste

Preparation
Arrange lettuce in large plates. Divide smoked salmon among plates and top with Canadian Cantonnier cheese. Garnish with capers. Sprinkle with olive oil and season to taste with pepper.
Serve immediately.
