Wild Rice with Canadian Brie, Blue Cheese and Peas

Ingredients
- 1 1/2 cups (375 mL) wild rice
- 3 cups (750 mL) water
- Salt
- 1 lb (450 g) fresh peas shelled or frozen peas drained
- 1 garlic clove finely chopped
- 3 1/2 oz (100 g) Canadian Brie rind removed, cubed
- 3 1/2 oz (100 g) Canadian blue Ermite cheese crumbled
- Salt and pepper to taste
- 1/2 cup (125 mL) walnut oil or olive oil

Preparation
Put rice in saucepan, add water and salt, bring to a boil over medium heat. Cover, cook over medium low heat for 50 minutes without uncovering.
Remove from heat and drain if not all of the liquid has been absorbed. Half cover the sauepan with lid and let cool 30 minutes.
Bring medium pot of water to a boil, add peas and cook until they rise to the top, about 30 to 45 seconds.
Remove from heat and cool under cold running water. Drain. Dry on paper towels and add to rice.
To dress salad: add garlic, both cheeses, salt and pepper to taste to rice and peas. Add oil and toss well.
