Ingredients

  • 4 large potatoes with peel
  • 6 eggs beaten
  • 2 green onions finely chopped
  • Salt and pepper to taste
  • A pinch of dried thyme
  • Grated Canadian Cheddar cheese

Preparation

Preheat oven to 350 °F (180 °C).

Cook potatoes in boiling water for 10 minutes. Drain and rinse under cold running water. Slice off top of each potato and scoop out as much flesh as possible, without piercing skin. Set aside.

In bowl, whisk together eggs and green onions. Season to taste with salt, pepper and thyme. Fill potato shells with egg mixture and place in buttered baking pan. Top each potato with Canadian Cheddar cheese and bake for 25 minutes or until potatoes are tender.

Remove from oven and serve one potato per person. Serve with bacon and sliced tomatoes.
