Blue Cheese Salad
This is the Blue Cheese Salad recipe.

Ingredients
- 1 romaine lettuce rinsed and patted dry
- 4 oz (125 g) Canadian Blue Ermite cheese crumbled
- 2 tbsp (30 mL) wine vinegar
- 1/3 cup (80 mL) olive oil
- 1 tbsp (15 mL) lemon juice
- Few drops of Worcestershire sauce
- Few drops of Tabasco sauce
- Salt and pepper to taste
- 1 cup (250 mL) croutons
- 2 tomatoes cut in half slices

Preparation
Shred lettuce and place in large salad bowl.
In food processor, blend half the Canadian Blue Ermite cheese with vinegar, oil, lemon juice, Worcestershire sauce and Tabasco. Season to taste.
When ready to serve, pour vinaigrette over salad and toss with remaining Canadian Blue Ermite cheese, croutons and tomatoes.
