Mint Chocolate Mousse

Ingredients

  • 6 oz (180 g) semisweet chocolate
  • 3 eggs yolks and whites separated
  • 2 tbsp (30 mL) sugar
  • 1 cup (250 mL) 35 % whipping cream
  • 1 tbsp (15 mL) crème de menthe liquor
  • 1/3 cup (80 mL) whipped cream

Preparation

Melt chocolate over double boiler or in micro-wave oven. Pour into large bowl.

In small bowl, lightly beat egg yolks and stir into melted chocolate.

In other bowl, beat egg whites until stiff but not dry, and gradually beat in sugar. Fold egg whites in chocolate mixture.

With electric mixer, whip cream with crème de menthe liquor and fold in chocolate and egg mixture.

Refrigerate for 2 hours. Serve in individual dessert cups and top with 1 tbsp (15 mL) whipped cream.
