Tortillas 'Con Pollo' with Salsa

Ingredients
- 1 skinless boneless chicken breast cut in strips
- 1 tbsp (15 mL) olive oil
- 1 cup (250 mL) mild salsa
- 1/2 cup (125 mL) sour cream
- 1 tsp (5 mL) ground cumin
- 1/2 tsp (2 mL) ground coriander
- Salt and pepper to taste
- Shredded lettuce
- Diced tomatoes
- Canadian Cheddar cheese slices
- Sliced black olives
- 1 avocado trimmed and sliced
- 8 corn tortillas or wheat tortillas

Preparation
In skillet, sauté chicken strips in oil for 7 to 8 minutes, or until chicken is nicely browned. Transfer chicken strips to large bowl. Stir in salsa and sour cream. Add cumin and coriander; season to taste with pepper. Mix well.
Divide chicken mixture among tortillas and garnish with lettuce, tomato, Canadian Cheddar cheese slices, olives and avocado. Fold bottom part over filling, then sides.
Serve with nachos and guacamole.
