White Chocolate Mousse Pie

Ingredients
- 1 rolled-out pastry
- White Chocolate Mousse
- 8 oz (250 g) white chocolate
- 8 oz (250 g) butter coarsely chopped
- 3 egg yolks
- 2 egg whites
- 1/2 cup (125 mL) sugar
- Semisweet chocolate grated

Preparation
Preheat oven to 350 °F(180 °C).
Fit pastry into 10 inch (25 cm) pie plate. Bake for 10 to 12 minutes until crispy. Set aside.
White Chocolate Mousse:
In double boiler, melt chocolate with butter while whisking. Remove from heat and pour in mixing bowl. Beat egg yolks into chocolate mixture, one at a time (mixture may separate at first), with electric mixer. Beat until thick and smooth.
In separate bowl, beat egg whites, until stiff but not dry, and gradually beat in sugar. With spatula, fold stiff egg whites into chocolate mixture. Pour chocolate mousse into cooled crust. Chill for about 2 hours before serving.
Garnish with semisweet grated chocolate and serve with choice of fresh fruit.
