Auvergne Style Salad with Bacon Bits

Ingredients
- 1 romaine lettuce rinsed, patted dry and torn in pieces
- 4 oz (125 g) bacon diced and cooked
- Croutons (optional)
- Blue Cheese Dressing
- 4 oz (125 g) Canadian Ermite Blue cheese
- 1 tbsp (15 mL) Dijon mustard
- 1 tbsp (15 mL) chopped fresh chives
- 1/4 cup (60 mL) white wine vinegar
- 1/2 cup (125 mL) olive oil
- Juice of 1 lemon
- Salt and pepper to taste

Preparation
In salad bowl, combine lettuce with bacon bits. Drizzle with Blue Cheese Dressing and toss. Serve in salad bowls and top with crispy croutons.
Blue Cheese Dressing:
In bowl, crumble Canadian Blue Ermite cheese with a fork. Add mustard, chives, white wine vinegar and mix well. Stir in olive oil and lemon juice, mixing until smooth. Season to taste with salt and pepper.
