Ingredients

  • 1 lb (450 g) skinless boneless chicken breast
  • Juice lemon of half lemon
  • 2 tbsp (30 mL) olive oil
  • 1 tbsp (15 mL) chopped fresh rosemary
  • Salt and pepper to taste
  • 4 pita bread halved
  • Lettuce leaves
  • Sliced tomatoes
  • 2 cups (500 mL) cooked rice
  • Garlic Mayonnaise
  • 1/3 cup (80 mL) mayonnaise
  • 1/3 cup (80 mL) sour cream
  • 3 garlic cloves finely chopped
  • Salt and pepper to taste
  • 1 tbsp (15 mL) lemon juice

Preparation

Brush chicken with lemon juice and olive oil. Season to taste with salt, pepper and rosemary. Grill over medium-high heat for 15 minutes. Remove from heat and slice grilled chicken. Arrange sliced chicken in each plate and serve with lettuce, tomatoes, pita bread and rice. Serve with Garlic Mayonnaise. Garnish with fresh parsley and lemon slices.

Garlic Mayonnaise:

In bowl, combine all ingredients and refrigerate.
