Polynesian Chicken Salad in Melon

Ingredients
- 2 cups (500 mL) diced cooked chicken
- 1 tbsp (15 mL) chopped fresh coriander
- 1/2 cup (125 mL) plain yogurt
- 1 tbsp (15 mL) honey
- 1/2 cup (125 mL) raspberries
- 2 tbsp (30 mL) white vinegar
- Fresh raspberries
- Green bell pepper cut in julienne
- 2 cantaloupes cut in 2 and seeded

Preparation
In bowl, combine chicken, coriander, yogurt, honey and raspberry. Set aside.
In small bowl, blend white vinegar with 5 to 6 raspberries, using a fork. Stir in chicken mixture. Add green bell pepper and mix well.
Arrange salad in cantaloupe halves and garnish with fresh raspberries and lemon wedges. Serve immediately with bread.
