Dijon Chicken Sandwich

Ingredients
- 1 boneless skinless chicken breast
- 2 tbsp (30 mL) olive oil
- Dried oregano
- Dried basil
- 3 tbsp (45 mL) mayonnaise
- 1 tbsp (15 mL) Dijon mustard
- 1 tbsp (15 mL) liquid honey
- 4 small Italian rolls or a choice of other rolls split in half lengthwise
- 1 red bell pepper sliced
- Canadian Swiss cheese slices
- Arugula or curly endive leaves

Preparation
In skillet, grill chicken breast in oil for 10 to 12 minutes. Season to taste with oregano and basil. Remove from skillet, slice and set aside.
In small bowl, mix mayonnaise, mustard and honey. Spread mixture on roll halves. Stuff each roll with slices of grilled chicken and red bell pepper. Top with Canadian Swiss cheese slices and arugula.
Serve with nachos and salsa.
