Swiss Scalloped Potatoes

Ingredients
- 6 cups (1.5 L) thinly sliced new potatoes
- 1/2 cup (125 mL) finely chopped onion
- 2 cups (500 mL) shredded Canadian Swiss cheese
- Salt and pepper to taste
- 1 can (10 oz / 284 mL) chicken broth
- 2 tbsp (30 mL) all-purpose flour

Preparation
Preheat oven to 350 ºF (180 ºC).
In 9 inch (23 cm) square baking dish, layer half the potato slices, half the onion then half the Canadian Swiss cheese; sprinkle lightly with salt and pepper. Repeat layering.
Gradually stir chicken broth into flour until smooth. Pour over potatoes and cheese. Bake 1 hour or until potatoes are tender and cheese is golden brown. Let stand 5 minutes before serving.
Italian Scalloped Potatoes:
Use shredded Canadian Mozzarella instead of Canadian Swiss cheese. Lightly sprinkle dried oregano or Italian seasoning over each layer of potatoes.
