Parmesan Dijon Chicken

Ingredients
- 2 tbsp (30 mL) hot pepper sauce
- 2 tbsp (30 mL) butter melted
- 3/4 cup (180 mL) fresh bread-crumbs
- 3/4 cup (180 mL) grated Canadian Parmesan cheese
- 1/3 cup (80 mL) Dijon mustard
- 1 tbsp (15 mL) water
- 8 boneless skinless chicken breast halves

Preparation
Preheat oven to 450 °F (230 °C).
In small bowl, combine 1 tbsp (15 mL) of the hot pepper sauce and butter. Toss mixture with bread crumbs and Canadian Parmesan cheese; set aside.
In shallow dish, combine mustard with remaining 1 tbsp (15 mL) hot pepper sauce and water. Coat chicken with mustard mixture; place on butterred 15 x 10 inch (38 x 25 cm) shallow baking pan.
Spoon Canadian Parmesan cheese mixture over chicken and press down lightly. Bake 20 minutes or until chicken is no longer pink in centre. Serve with Spicy Sauce, if desired.
Spicy Sauce:
In small saucepan, combine 1/3 cup (80 mL) hot pepper sauce, 2 tbsp (30 mL) butter and 2 tsp (10 mL) lemon juice. Heat until butter is melted.
Makes about 1/2 cup (125 mL).
