Cheese Steak Sandwiches

Ingredients
- Cheese Sauce
- 2 tbsp (30 mL) butter
- 2 tbsp (30 mL) all purpose flour
- 3/4 cup (180 mL) Milk
- 1 cup (250 mL) shredded Canadian Cheddar* cheese
- Steak Sandwiches
- 1 tbsp (15 mL) butter
- 1 large onion thinly sliced
- 1 large green bell pepper thinly sliced
- 1 lb (450 g) minute steaks cut in thin strips
- Salt and pepper to taste
- 4 large crusty rolls split in half

Preparation
Cheese Sauce
In medium saucepan, melt butter. Blend in flour. Gradually stir in milk. Cook and stir over medium heat until mixture boils and thickens. Remove from heat, add Canadian Cheddar cheese and stir until it is melted. Cover and keep warm.
Steak Sandwiches
In large skillet, heat butter. Sauté onion and green bell pepper until tender; remove from pan with slotted spoon and keep warm. Add more butter to pan, if necessary, and sauté meat until cooked as desired. Return vegetables to pan and heat through. Add salt and pepper to taste.
Distribute meat and vegetable mixture over bottom half of each roll. Spoon about 1/4 cup (60 mL) Cheese sauce over each serving. Replace top of roll.
Tips
* Or you can use shredded Canadian Colby, Brick, Farmers' or Gouda cheese.
