Scandinavian Pea Soup
This recipe is taken from the 1980 Milk Calendar. The Vikings were the first Europeans to discover Canada, so it seems fitting that they lead off the year. Like Canadians, the Scandinavians take advantage of their cold climate and are enthusiastic skiers, skaters, and of course, hockey players.
This hearty soup is almost a meal in itself and is an excellent way to warm up after a winter work-out.
