Comforting and creamy, without being unnecessarily heavy, this delicious cake will deliver all the sugar and spice you expect from a Christmas dessert, thanks to a sweet mix of ginger, cinnamon, nutmeg, vanilla, maple syrup and molasses. The secret to the extra smoothness and depth in the frosting? Canadian Mascarpone. Now that’s a dessert recipe that all the holiday lovers and the sweet-tooth havers at Christmas dinner will agree on. Gingerbread Cake with Mascarpone Frosting

Ingredients

  • Gingerbread Cake
  • 2 ½ cups (625 ml) flour
  • ½ cup (125 ml) sugar or golden sugar
  • 1 tsp (5 ml) baking powder
  • 2 pinches of salt
  • 2 to 3 tsp (10 - 15 ml) cinnamon
  • 2 tsp (10 ml) ground ginger
  • 1 pinch ground nutmeg
  • 1 ¼ cup (310 ml) Canadian reduced-fat milk
  • ½ to ⅔ cups (125 to 160 ml) melted Canadian butter
  • ¾ cup (185 ml) molasses
  • ¼ cup (60 ml) maple syrup
  • 2 eggs
  • 1 tsp (5 ml) vanilla
  • Mascarpone Frosting
  • ½ cup (125 ml) Canadian mascarpone
  • ½ cup (125 ml) Canadian cream cheese
  • 1 tsp (5 ml) vanilla
  • ½ to 1 cup (125 to 250 ml) powdered sugar (to taste)
  • ⅓ cup (80 ml) Canadian butter

Preparation

Gingerbread Cake

Preheat oven to 375 F.

Mix dry ingredients.

Mix wet ingredients.

Add the wet ingredients to the dry ingredients. Mix well.

Pour the mixture into your cake pan of choice.

Bake for 30 to 40 minutes.

Mascarpone Frosting

Mix the ingredients until a smooth and creamy consistency is reached.

Allow the cake to cool off before frosting it.
