Creamy Mushroom Gnocchi

Ingredients

  • 2 tsp (10 g) Canadian butter
  • 1 c. (200 g) mushrooms, sliced
  • 1 clove garlic, crushed
  • 1 c. (250 g) cherry tomatoes, sliced in half
  • 1 c. (250 ml) Canadian cooking cream
  • 2 c. (500 g) gnocchi
  • 2 c. (500 ml) vegetable broth
  • 1/4 cup (50 g) grated Canadian Parmesan cheese
  • 2 tbsp (30 ml) fresh basil, chopped

Preparation

Heat a large frying pan over medium heat and add the butter. Add the mushrooms to the pan and cook for a few minutes, until tender.

Add the crushed garlic and cherry tomatoes to the pan and mix with the mushrooms.

Pour in the cooking cream. Add the gnocchi, stir in the vegetable stock and bring to a simmer for 5 minutes.

Sprinkle in the Parmesan and stir. Cover with a lid so that the Parmesan melts more quickly.

Add the chopped basil, stir and serve immediately.
