Creamy Potato Soup

Ingredients
- 1 cup (250 g) diced or sliced bacon
- 2 cups (350 g) finely chopped yellow onions
- 1 tbsp (about 3 cloves) minced garlic
- 1.5 kg (3.3 lb) potatoes, peeled and diced
- 1 cup (250 ml) Canadian milk
- 1 cup (240 ml) cooking cream
- 1/3 cup (75 g) Canadian salted butter
- 1 cup (200 g) shredded Canadian cheddar cheese
- 1/2 cup (100 g) Canadian sour cream
- 4 cups (900 ml) chicken broth
- Salt and pepper to taste
- Pinch of ground nutmeg

Preparation
In a large pot, cook the bacon over medium heat until crisp. Remove and place on paper towels to drain. Keep some of the bacon fat in the pot for cooking the onions.
In the same pot, sauté the onions for 5 to 7 minutes, until translucent. Add the minced garlic and cook for 1 minute.
Add the diced potatoes to the pot.
Pour in the chicken broth and bring to a boil. Reduce heat and simmer for 15 to 20 minutes, or until the potatoes are tender when pierced with a fork.
For a creamier texture, use an immersion blender to partially purée the soup, leaving some potato chunks if desired.
Reduce heat to low and stir in the milk, cooking cream, butter, and shredded cheddar.
Stir gently until the cheese is fully melted and the soup is smooth. Add the sour cream and mix well. Season with salt and pepper to taste. Sprinkle with a pinch of nutmeg.
Serve hot, topped with the reserved crispy bacon and chives.
