Avocado and Tzatziki Toasts
Remember when avocado toast took over the world? Here is our take on this fresh, creamy recipe that combines the delicate taste of avocado with the rich, tangy flavour of Greek yogurt. A true staple to be enjoyed again and again!

Ingredients
- Tzatziki sauce
- 1 cucumber (about 250 g - 8 ounces)
- 3/4 cup (120 to 150 g) plain Canadian Greek yogurt
- 3 tablespoons (45 ml) olive oil
- 2 tablespoons (30 ml) lemon juice
- 1 large clove garlic, pressed
- 1 teaspoon (5 ml) dried or fresh dill
- 10 fresh mint leaves, chopped
- 1 pinch salt
- Toasts
- 2 slices sourdough bread
- 1 ripe avocado
- 1 tablespoon (10 g) Canadian Feta Cheese
- Pepper
- A handful of sesame seeds
- 2 teaspoons (10ml) olive oil

Preparation
Tzatziki sauce
Grate the cucumber using the large holes on the grater, then squeeze it between your hands to remove as much liquid as possible.
Place the yogourt in a small bowl with the grated cucumber, crushed garlic, lemon juice, olive oil, chopped mint, fresh dill and salt. Mix well.
Leave the Tzatziki to rest in a cool place for at least 30 min to allow the flavours to develop.
Assembly
Cut two slices of sourdough bread.
Toast the bread.
Spread the Tzatziki sauce generously over the toasted bread slices.
Halve the avocado and cut into thin slices. Gently lay the avocado slices on top of the sauce.
Add crumbled feta cheese on top.
Season with a drizzle of olive oil, sesame seeds and pepper.
