Bacon and Brie Mac & Cheese
Decadence abounds with this comforting mac and cheese elevated by sophisticated Canadian Brie and savoury bacon.

Ingredients
- 1 tbsp (15 mL) Canadian butter
- 2 cups (500 mL) macaroni pasta
- 1 ½ lbs (750 g) Canadian Brie cheese
- 4 cups (1 L) whole Canadian milk
- 1 tbsp (15 mL) onion powder
- 2 tsp (10 mL) garlic powder
- 1 cup (250 mL) shredded Canadian Cheddar cheese
- 2 cups (500 mL) shredded Canadian mozzarella cheese, divided
- 2 jalapeños peppers, seeded and diced
- ½ tsp (2 mL) salt
- ¼ tsp (1 mL) black pepper
- 3 tbsp (45 mL) cornstarch
- 1 lb (500 g) bacon, chopped and cooked, divided
- 2 tbsp (30 mL) chopped fresh parsley

Preparation
Preheat oven at 350°F (180 °C). Grease large cast-iron pan or casserole dish with butter.
Cook pasta according to package directions. Drain.
Trim and discard rind from Canadian Brie.
In large heavy-bottomed saucepan set over medium heat, warm milk until hot. Whisk in onion powder, garlic powder, Brie, Cheddar and 1 cup (250 mL) mozzarella until fully incorporated. Stir in jalapeños, salt and pepper. Remove from heat.
In small bowl, stir together cornstarch and 2 tbsp (30 mL) water. Whisk into cheese mixture.
Reserve 1/4 cup (60 mL) bacon for garnish. Stir remaining bacon into cheese mixture. Add macaroni and stir to coat. Transfer to prepared cast-iron pan. Top with remaining mozzarella.
Bake for 15 to 20 minutes or until golden and bubbling. Let stand for 5 to 19 minutes.
Garnish with reserved bacon and parsley, and enjoy!
