Beef Fajitas

Ingredients

  • 1 lb (450 g) boneless sirloin steak cut in thin 3 inch (7.5 cm) long strips
  • 1 tbsp (15 mL) butter
  • 2 garlic cloves finely chopped
  • 1 Spanish onion sliced
  • 2 hot peppers chopped
  • 1 yellow bell pepper sliced
  • 1 tbsp (15 mL) cumin powder
  • 1 tbsp (15 mL) chili powder
  • 2 tbsp (30 mL) lime juice
  • 1/4 cup (60 mL) vegetable broth
  • 1 tbsp (15 mL) cornstarch
  • 2 tomatoes diced
  • Pepper to taste
  • 8 tortillas
  • Sour cream
  • 1 avocado peeled and diced
  • Mild salsa
  • Lime in quarters

Preparation

In very hot skillet or wok, brown meat in butter for about 2 minutes. Remove meat from skillet and set aside.

In same skillet, sauté garlic, onion, hot peppers and yellow pepper for 3 minutes over high heat while stirring. Reduce to medium heat. Add cumin, chili powder, lime juice and broth. Mix well and stir in cornstarch, mixed together with cold water.

Cook for 3 minutes. Stir in meat and tomatoes, bring to boil. Pepper to taste. Remove from heat and pour beef mixture in serving dish.

To prepare fajitas, spoon beef mixture along centre of each tortilla. Garnish with sour cream, avocado and salsa. Sprinkle with lime juice. Fold bottom border over filling then sides and serve with lime quarters.
