Chicken and Apple Brochettes with Mango Sauce

Ingredients
- 2 boneless skinless chicken breasts cubed
- 1 cup (250 mL) apple juice
- 1 tsp (5 mL) ground ginger
- 2 apples peeled, cored and quartered
- 16 pitted black olives
- 8 wet bamboo skewers
- Mango Sauce
- Flesh of 1/2 mango
- 1/2 cup (125 mL) sour cream
- 1 tbsp (15 mL) chopped chives
- Salt and pepper to taste

Preparation
In large bowl, mix together chicken cubes, apple juice and ginger. Mix well and refrigerate for 3 hours. Thread chicken cubes, apple quarters and black olives alternately onto skewers. Grill over medium heat for 15 to 20 minutes, turning skewers several times and brushing brochettes with marinade.
Serve two brochettes per person with Caesar salad and Mango Sauce.
Mango Sauce:
In food processor, purée all ingredients. Refrigerate.
