This is the Cottage Cheese stuffed tomatoes recipe.

- 24 cherry tomatoes
- 2 tbsp (30 mL) capers
- 1/4 cup (60 mL) sour dill pickles
- 1/2 cup (125 mL) Canadian Cottage Cheese
- 2 tbsp (30 mL) fresh parsley chopped
- 1 tsp (5 mL) wine vinegar
- Salt and freshly ground pepper

Slice top off tomatoes and scoop out the insides. Place upside down on a paper towel to drain.
Chop capers and pickles. Mix with Cottage Cheese, parsley and vinegar. Season with salt and pepper.
Fill cherry tomatoes with Cottage Cheese mixture and place on a serving plate. Refrigerate until ready to serve.
