Ingredients

  • 1 lb (450 g) pork loin or leg cut into 3/4 in (2 cm) cubes
  • 2 small zucchini in chunks
  • 1 red bell pepper cut in large pieces
  • 3 tbsp (45 mL) olive oil
  • Salt and pepper to taste
  • 1 tbsp (15 mL) fresh rosemary
  • Sauce
  • 1/2 cup (125 mL) 35 % whipping cream
  • 1/2 garlic clove finely minced
  • 1 tomato seeded and cut into strips
  • Salt and pepper to taste
  • 3 tbsp (45 mL) grainy mustard

Preparation

Alternate pork cubes, zucchini and peppers on skewers. Brush with olive oil. Season with salt and pepper and cook on barbecue or in the oven at 400 °F (200 °C) for 6 to 8 minutes. Sprinkle with rosemary.

Sauce :

Heat cream, garlic and tomato. Season with salt and pepper. Cook 2 to 3 minutes. Add mustard, bring to a boil and serve separately.
