Golden Yam and Canadian Cheddar Soup

Ingredients

  • 3 tbsp (45 mL) butter
  • 1 medium onion chopped
  • 2 medium carrots sliced in 1/4 inch thick (7 mm)
  • 1 green bell pepper seeded and chopped
  • 2 cups (500 mL) chicken broth
  • 1/2 tsp (3 mL) ground cinnamon
  • 2 cups (500 mL) cooked yams mashed
  • 2 cups (500 mL) Milk
  • 2 cups (250 mL) Sharp Canadian Cheddar grated
  • 2 tbsp (30 mL) Worcestershire sauce
  • Salt and pepper to taste

Preparation

Melt butter in pan on medium heat. Add onion, carrots, peppers. Cook, stirring until onion is soft. Stir in broth and cinnamon.

Boil on high, reduce heat, cover and let simmer for 15 to 20 minutes. Stir yams into broth. Put in blender (a little at a time) and blend until smooth.

Return to pan. Stir in milk. Heat until steaming. Add Sharp Canadian Cheddar, a little at a time. Stir in Worcestershire sauce; season with salt and pepper.
