Grilled Salmon with Avocado Herb Sauce

Ingredients
- 6 6 oz (175 g) salmon steaks
- 2 tbsp (30 mL) melted butter
- Sauce
- 1 cup (250 mL) 35 % cream
- 1 ripe avocado peeled and pitted
- 1/4 cup (60 mL) chopped red onion
- 2 tbsp (30 mL) fresh mint
- 2 tbsp (30 mL) parsley
- 2 tbsp (30 mL) lemon juice
- 1 tbsp (15 mL) fresh coriander
- 1/2 tsp (2 mL) ground cumin
- 1/2 tsp (2 mL) Tabasco sauce
- 1/2 tsp (2 mL) salt
- 1/2 tsp (2 mL) pepper
- 1 garlic clove

Preparation
Sauce:
Measure all ingredients into a blender or food processor. Blend until smooth. Season to taste. Refrigerate for at least 2 hrs for flavours to blend.
Reserve 1-1/2 cups (375 mL) and use remaining sauce to brush on salmon during cooking.
Brush salmon steaks with butter. Pre-heat grill to medium. Place salmon steaks on grill. Cook 4 to 5 min per side, brushing cooked sides with sauce. Serve salmon steaks immediately with reserved sauce.
