Lime and Jalapeno Grilled Shrimp

Ingredients

  • 24 to 32 medium shrimp shelled and deveined
  • 2 limes cut in half quarters
  • Jalapeno Marinade
  • 1/4 cup (60 mL) chopped marinated jalapeno
  • 1/4 cup (60 mL) chopped fresh coriander
  • Juice of 1 lime
  • 1/4 cup (60 mL) orange juice
  • 1/3 cup (80 mL) olive oil
  • Salt and pepper to taste
  • Avocado and Sour Cream Sauce
  • 1 avocado peeled and pitted
  • 1/2 cup (125 mL) sour cream
  • 1 tbsp (15 mL) lime juice
  • 2 tbsp (30 mL) olive oil
  • 1/2 onion finely chopped
  • Salt
  • Lime juice

Preparation

In bowl, mix shrimp with Jalapeno Marinade. Mix well, cover and chill for 2 hours, stirring occasionally. Thread 4 shrimp on each skewer alternately with lime segments. Cook on barbecue grill over medium-high for 1 to 2 minutes on each side, basting with marinade.

Serve 2 kebabs per person with Avocado and Sour Cream Sauce. Serve with steamed fresh asparagus and fresh herb pasta.

Jalapeno Marinade:

Process all ingredients in food processor until smooth. Pour in airtight container and refrigerate.

Avocado and Sour Cream Sauce:

In bowl, combine all ingredients with a fork. Salt to taste and drizzle with lime juice. Cover and chill until ready to use.
