Ingredients
- 2 tbsp. (30 ml) pumpkin puree
- 1/3 cup (80 ml) freshly brewed coffee
- 3 tsp. (15 ml) sugar
- 1 tsp. (5 ml) pumpkin pie spice
- 1 cup (250 ml) Canadian whipping cream
- Crushed cookies (optional)

Preparation
Mix pumpkin purée, coffee, sugar and spices in a bowl until well combined.
In a separate bowl, beat whipping cream until stiff.
Gently fold the pumpkin puree mixture into the whipped cream in 4 batches using a spatula.
Pour into 2 glasses or bowls.
Let stand in refrigerator.
Sprinkle with crushed cookies (optional) and serve immediately.
