Quick Mozzarella Chicken

Ingredients
- 4 skinless and boneless, chicken breast halves trimmed
- Salt and pepper to taste
- 1/3 cup (80 mL) all-purpose flour
- 1 egg lightly beaten
- 1/3 cup (80 mL) dry Italian breadcrumbs
- 2 tbsp (30 mL) grated Canadian Parmesan cheese
- 1 tbsp (15 mL) butter
- 1 tbsp (15 mL) vegetable oil
- 1 cup (250 mL) shredded Canadian Mozzarella cheese
- 1 1/2 cups (375 mL) tomato sauce

Preparation
Season chicken lightly with salt and pepper. Coat with flour; shake off excess. Dip into beaten egg and then roll in breadcrumb and Canadian Parmesan mixture. (Chicken may be prepared up to 2 hours ahead; keep refrigerated.)
Heat butter and oil in medium non-stick skillet over medium-low heat. Add chicken and cook until golden brown outside and no longer pink inside, 12 to 15 minutes. Remove from heat. Sprinkle Canadian Mozzarella cheese over chicken, cover and let rest until cheese is melted, about 2 minutes.
Meanwhile, heat tomato sauce. Serve with chicken.
