Raspberry Peach Clafouti

This French dessert is traditionally made with cherries. Any fruit of your choice can be baked into the pancake-like batter for a light treat.

Ingredients

  • 3 large eggs
  • 1/2 cup (125 mL) sugar
  • 3/4 cup (180 mL) 5 % cream
  • 1 tsp (5 mL) vanilla extract
  • 1/2 cup (125 mL) all-purpose flour
  • of salt
  • 1/2 cup (125 mL) chopped peaches peeled fresh or well drained canned
  • 1/2 cup (125 mL) fresh raspberries

Preparation

Butter a deep 9 or 10-inch (23 or 25 cm) pie plate. Preheat oven to 350 °F (180 °C).

Beat eggs and sugar in a medium bowl using an electric mixer. Add cream and beat until combined. Stir in vanilla extract, flour and salt. Sprinkle fruit over bottom of prepared dish. Pour batter over fruit.

Bake in preheated oven for about 45 minutes or until set. Cover loosely with foil during cooking if top is browning too fast. Serve warm or cold.

Tips

If you are using canned fruit make sure it is thoroughly drained and patted dry.
