Scandinavian Eggs

Ingredients
- 12 hard-boiled eggs cut in halves
- 4 tbsp (60 mL) sour cream
- 4 green onions chopped
- 6 slices of smoked salmon chopped
- 1 tbsp (15 mL) lemon juice
- 1/2 tsp (2 mL) dried dill
- Salt and pepper to taste
- 2 tbsp (30 mL) caviar or other fish eggs

Preparation
Remove yolks from egg halves and place in small bowl. Reserve egg-white halves. Add all remaining ingredients, except caviar, to egg yolks and mix well, crushing with a fork.
Season to taste with salt and pepper and mix well. Fill the whites with yolk mixture and top with some caviar. Place the 24 stuffed egg halves on serving platter and serve immediately. Keeps well in refrigerator.
