White Chocolate Graham Slice

Ingredients
- 6 Squares (6 oz/180 g) Baker's white chocolate chopped
- 2 cups (500 mL) 35 % whipping cream
- 1 pkg (10 oz/300 g) frozen raspberries thawed
- 1 sleeve (6 oz/200 g) Honey maid graham wafers

Preparation
Microwave white chocolate on medium for 1 to 2 minutes or until almost melted. Stir until smooth and let cool to room temperature. Whip cream until thick. Fold in chocolate. Measure out about one-third of the mixture.
Fold raspberries and its juices into smaller portion of the cream mixture. Spread equal amounts of raspberry mixture on one side of each graham wafer. Sandwich crackers into an accordion-shaped row.
Using clean knife, spread reserved cream mixture evenly all over outside of graham wafers, decorating with swirls or a cake comb. Refrigerate until frosting is firm. Cover with a cake dome or bowl. Cut on diagonal into slices.
