Fruity Omelet with Maple Yogurt

Ingredients
- 7 large eggs
- 1 cup (250 mL) fruit yogurt
- 1/4 cup (60 mL) maple syrup
- 1/2 cup (125 mL) 15 % or 18 % cream
- 2 tbsp (30 mL) butter
- 6 fresh strawberries hulled
- 6 banana slices
- 8 seedless green grapes
- Maple syrup

Preparation
In bowl, whisk eggs for 20 to 30 seconds. Stir in yogurt, maple syrup and cream, stirring until smooth. Set aside.
In large non-stick skillet, heat butter over medium heat and pour in egg mixture. Cover and cook omelette for about 8 minutes or until preferred doneness. Top with fresh fruit and drizzle with maple syrup. Cook for another 2 minutes.
Remove from heat and serve immediately.
