Ingredients

  • Pink Lemonade Cream
  • 1/2 cup (125 mL) frozen pink lemonade concentrate thawed
  • 1 1/2 tsp (7 mL) corn starch
  • 1/2 cup (125 mL) whipping cream 35 %
  • Sassy Daiquiri Cream
  • 1 egg beaten
  • 1/3 cup (80 mL) sugar
  • 1/2 tsp (2 mL) grated lime rind
  • 1/4 cup (60 mL) lime juice
  • 2 tbsp (30 mL) butter
  • 1/2 cup (125 mL) whipping cream 35 %

Preparation

Pink Lemonade Cream:

Combine lemonade concentrate and corn starch. Stir over medium-high heat until mixture comes to a boil and thickens. Cool. Whip cream until thick. Fold lemonade mixture into whipped cream.

Makes 1 1/2 cups (375 mL).

Sassy Daiquiri Cream:

Combine egg, sugar, lime rind, lime juice and butter. Stir over low heat until smoothly thickened. Cool. Whip cream until thick. Fold in lime mixture. Tint a pale green, if desired.

Makes 1 2/3 cups (410 mL).
