Cozy Creamy Beef and Garlic Butter Pasta

Ingredients

  • 2 lbs (1 kg) ground beef
  • 1 medium onion, diced
  • ¼ cup (60 mL) Canadian butter
  • 2 bell peppers (any colour), seeded and diced
  • 8 cloves garlic, minced
  • 2 tsp (10 mL) dried Italian seasoning
  • 1 tsp (5 mL) salt
  • ½ tsp (2 mL) black pepper
  • 2 cups (500 mL) Canadian 35% cream
  • 1 cup (250 mL) beef broth
  • 1 lb (500 g) elbow macaroni
  • 1 cup (250 mL) grated Canadian Parmesan cheese (or cheese of choice, such as mozzarella or cheddar), divided
  • 1 tbsp (15 mL) chopped fresh parsley or chives (optional)

Preparation

In large saucepan set over medium-high heat, cook ground beef and onion for 10 to 12 minutes or until starting to brown. Drain and discard grease.

Stir in butter until melted. Add bell peppers, garlic, Italian seasoning, salt and pepper, and cook for 2 to 4 minutes or until peppers have softened.

Pour in broth and cream. Bring to a boil. Reduce heat to a simmer and cook, stirring occasionally, for 5 minutes.

Stir in macaroni, ensuring it is covered by liquid (if needed, add a little more beef broth or water). Bring back to a boil. Reduce heat to a simmer, cover and cook, stirring occasionally, for 8 to 10 minutes or until pasta is al dente.

Remove from heat and stir in half the Parmesan until melted. If using, garnish with parsley. Serve with remaining Parmesan.

Tips

Cheese can be mixed into the whole dish or topped over individual dishes. If desired, substitute half of the cream with 1 cup (250 mL) milk. Use your choice of pasta, such as small shells, fusilli or orecchiette, adjusting cooking time as needed until al dente.
