Family Favourite Pistachio Delight

Ingredients

  • Crust
  • 1 1/3 cups (325 mL) all-purpose flour
  • 1 cup (250 mL) finely chopped nuts of your choice (optional)
  • ½ cup (125 mL) Canadian butter, softened
  • 2 tbsp (30 mL) cold water
  • Cream Cheese Layer
  • 2 cups (500 mL) Canadian 35% cream
  • 1 pkg (8 oz/250 g) brick-style Canadian cream cheese, softened
  • 1 cup (250 mL) confectioners’ (icing) sugar
  • Pudding Layer
  • 2 pkgs (each 3.5 oz/99 g) pistachio pudding mix
  • 3 cups (750 mL) Canadian milk
  • 1/2 cup (125 mL) finely chopped nuts of your choice (optional)

Preparation

Crust

Preheat oven to 350°F (180°C).

In a large bowl, stir together flour, nuts (if using) and butter until butter is incorporated and mixture is crumbly. Drizzle in water and stir until dough forms. Press into bottom of 13 x 9-inch (33 x 23 cm) baking dish.

Bake for 20 to 25 minutes or until golden. Let cool completely.

Cream Cheese Layer

Meanwhile, in a medium mixing bowl, using electric mixer on low speed, beat cream, increasing to medium-high speed until stiff peaks form and doubled in volume.

In another medium bowl, using electric mixer with clean beaters, beat together cream cheese and confectioners’ sugar until smooth. Fold in 1 cup (250 mL) whipped cream into the cream cheese mixture until combined. Spread over cooled crust and smooth top.

Pudding Layer

Meanwhile, in another medium bowl, using electric mixer with clean beaters, beat together pudding mixes and milk for 2 to 3 minutes or until thickened and smooth. Gently spread over cream cheese mixture layer. Smooth top. Spread remaining whipped cream on top. Garnish with nuts, if desired.

Tips

If desired, garnish with fresh berries for a burst of colour and flavour. Garnish with a drizzle of melted white, milk or dark chocolate for added decadence.
